- Wash and dry all produce. Bring a large pot of salted water to a boil. Halve, peel and dice the onion. Peel and finely dice the carrot. Mince or grate the garlic. Trim and roughly chop half the mushrooms (save the rest for another use). Roughly chop the parsley.
- Heat a drizzle of olive oil in a large pan over medium heat. Add the onion, carrot and garlic; cook until softened, about 5 minutes. Add the mushrooms and cook until tender, about 5 minutes more. Season with salt and pepper.
- Once the water is boiling, add the spaghetti and cook until al dente, 9-11 minutes. Before draining, scoop out and reserve ½ cup of pasta cooking water. Drain the spaghetti.
- Add the sausage to the pan with the vegetables, breaking it up into pieces. Cook until no longer pink, about 5 minutes. Stir in the crushed tomatoes, reserved pasta water and half the chicken stock concentrate. Simmer until slightly thickened, 4-5 minutes. Season with salt and pepper.
- Add the spinach to the pan and stir until wilted. If the sauce seems too thick, add a splash of water. Taste and adjust seasoning with salt and pepper.
- Divide the spaghetti among plates and top with the Bolognese sauce. Sprinkle with Parmesan cheese and chopped parsley.
