- Preheat oven to 425°F. Wash and dry produce. Dice potatoes into 1/2-inch pieces. Trim green beans if needed. Finely dice onion. Mince chives.
- Place potatoes in a medium pot with enough salted water to cover. Bring to a boil and cook until tender, 15-20 minutes. Drain and return to pot.
- Meanwhile, on a baking sheet, toss green beans with a drizzle of oil, salt and pepper. Roast until tender and slightly charred, 15-20 minutes.
- In a large bowl, combine ground beef, panko, half the diced onion, half the fry seasoning, salt and pepper. Form into 1-inch meatballs.
- Heat a large pan over medium-high heat with a drizzle of oil. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through, 8-10 minutes. Remove meatballs and set aside.
- In the same pan, add remaining onion and cook until softened, 2-3 minutes. Sprinkle flour over onion and stir for 1 minute. Whisk in beef stock concentrate and 1 cup water. Bring to a simmer and cook until thickened, 2-3 minutes. Season with salt and pepper.
- Return meatballs to pan and coat with gravy. Keep warm.
- Mash potatoes with sour cream, chives, remaining fry seasoning, salt and pepper until smooth. Adjust consistency with a splash of water if needed.
- Serve meatballs and gravy over mashed potatoes with roasted green beans on the side.
