Instructions

  1. Preheat oven to 450°F with rack in top position. Bring a large pot of salted water to a boil. Cut broccoli into 1-inch florets. Zest and quarter the lemon. Mince or grate garlic.
  2. Toss broccoli on a baking sheet with a drizzle of olive oil, salt and pepper. Roast on top rack until browned and crispy, 12-15 minutes.
  3. Add spaghetti to boiling water and cook until al dente, 9-11 minutes. Reserve ½ cup pasta water, then drain.
  4. Place butter in a small microwave-safe bowl and microwave until softened, about 10 seconds. Stir in lemon zest, half the Parmesan, a pinch of garlic and a pinch of chili flakes. Mash with a fork; season with salt and pepper.
  5. Rinse shrimp and pat dry. Toss with olive oil, remaining garlic, salt and pepper. Heat a large pan over medium-high heat. Cook shrimp until opaque, 2-4 minutes.
  6. Add drained spaghetti, roasted broccoli, stock concentrate, garlic butter and ¼ cup reserved pasta water to the pan. Toss to coat. Squeeze in lemon juice to taste; season with salt and pepper. Serve topped with remaining Parmesan and chili flakes, with lemon wedges on the side.
