Instructions

  1. Wash and dry produce. Halve, peel and finely dice the onion. Reserve 2 tablespoons of diced onion for the salsa.
  2. Open the package of chopped chicken and drain off any excess liquid. Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add the chicken, blackening spice, remaining onion, salt and pepper. Cook, stirring occasionally, until the chicken is browned and cooked through, 4-6 minutes. Turn off the heat; transfer the chicken to a plate. Wipe out the pan.
  3. While the chicken cooks, finely dice the tomato. Zest the lime and quarter it. In a medium bowl, combine the diced tomato, juice from one lime wedge (two wedges for 4 servings) and as much reserved onion as you like. Season with salt and pepper. Set aside.
  4. In a small bowl, combine the sour cream, juice from one lime wedge (two wedges for 4 servings) and lime zest to taste. Stir in water 1 teaspoon at a time until the mixture reaches a drizzling consistency. Season with salt and pepper. Set aside.
  5. Place the tortillas on a clean work surface. Evenly sprinkle pepper jack cheese and Mexican cheese blend onto one half of each tortilla. Top the cheese with the cooked chicken filling, then fold the tortillas in half to create quesadillas.
  6. Heat a drizzle of oil and 1 tablespoon butter (2 tablespoons for 4 servings) in the pan used for the filling over medium-high heat. Working in batches, add the quesadillas and cook until golden brown on the first side, 1-2 minutes. Flip and cook 1 minute more. Transfer to a paper-towel-lined plate.
