Dinner5 min699 cal / serving

If you love tacos but want to switch things up, these baked turkey flautas are a must-try. Instead of frying, we bake the rolled tortillas until they’re perfectly golden and crispy, giving you all the crunch without the mess. The filling is a flavorful mix of ground turkey, onions and a Southwest spice blend, plus melted Mexican cheese that holds everything together.

Once they’re out of the oven, top them with a bright, chunky pico de gallo and a creamy lime crema. The combination of crispy, creamy and fresh makes every bite irresistible. Serve them as a main dish or appetizer-they’re sure to disappear fast.

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Finely dice the onion. Cut the tomato into small cubes. Zest and juice the lime.
  3. In a skillet over medium-high heat, cook the ground turkey, breaking it apart, until no longer pink, about 5-7 minutes. Drain excess fat if needed.
  4. Add the diced onion to the skillet and cook for 2-3 minutes until softened. Stir in the Southwest spice blend and Tex-Mex paste, cooking for 1 minute until fragrant. Remove from heat.
  5. Warm the flour tortillas briefly in the microwave or on a dry skillet to make them pliable. Place a generous spoonful of the turkey mixture down the center of each tortilla, then sprinkle with Mexican cheese blend.
  6. Roll up each tortilla tightly and place seam-side down on the prepared baking sheet. Lightly spray or brush the tops with oil for extra crispiness.
  7. Bake for 12-15 minutes, until the tortillas are golden and crispy. While they bake, make the pico de gallo and lime crema.
  8. For the pico de gallo: In a small bowl, combine the diced tomato, half the diced onion (reserve some for garnish if desired), a squeeze of lime juice and a pinch of salt. Mix well.
  9. For the lime crema: In another bowl, stir together the sour cream, lime zest and remaining lime juice. Season with salt to taste.
  10. Serve the baked flautas with pico de gallo and lime crema on the side. Garnish with extra lime wedges or cilantro if desired.

Recipe Tips

For extra crispy flautas, make sure to roll them tightly and place them seam-side down on the baking sheet.

If you prefer a spicier kick, add a pinch of cayenne or chili powder to the turkey mixture.

Let the baked flautas cool for a minute before serving so the filling sets slightly.

FAQ

Can I use corn tortillas instead of flour?

Yes, corn tortillas work well, but they are smaller and more prone to cracking. Warm them thoroughly and roll gently.

How do I store leftover flautas?

Store leftover flautas in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to restore crispiness.

Can I make these ahead of time?

You can assemble the flautas (without baking) and refrigerate for up to 24 hours. Bake just before serving for best results.
