There’s nothing quite like a warm, hearty bowl of soup on a chilly day-especially when that bowl is actually a crusty, toasted sourdough bread bowl. This creamy broccoli cheddar soup is extra special, made with a flavorful chicken broth base and sweet light cream, packed with tender broccoli florets and sharp cheddar cheese. Every spoonful is pure comfort.

Don’t toss the bread you scoop out! Save it for dipping into the rich, cheesy soup. This dish is incredibly easy to prepare-just heat the soup, toast the bread bowl and you’re ready to dig in. One slurp and you’ll be completely bowled over.

Instructions

  1. Keep the soup frozen or refrigerated until ready to use.
  2. To heat the soup, bring a pot of water to a boil. Submerge the sealed bag in the boiling water and cook for 20 minutes. Carefully remove the bag (it will be very hot). Cut one corner of the bag and pour the soup into a bowl.
  3. Alternatively, cut one corner of the bag and pour the soup into a microwave-safe container. Cover loosely with a microwave-safe plastic wrap or paper towel. Microwave on high for 5-6 minutes, stirring halfway through. Be cautious-the container and soup will be very hot.
  4. For the bread bowl: Preheat your oven to 350°F (175°C). Cut a 2-4 inch circle into the top of each sourdough loaf and remove the top. Scoop out the soft interior bread to create a hollow bowl. Brush the inside of each bread bowl with melted butter (about 1 tablespoon total). Place the bread bowls on a baking sheet and toast in the oven for 7-8 minutes, until lightly golden and warmed through.
  5. Fill each toasted bread bowl with the hot broccoli cheddar soup. Serve immediately, using the scooped-out bread pieces for dipping.

Recipe Tips

For extra flavor, add a pinch of black pepper or a dash of hot sauce to the soup before serving.

If you prefer a thicker soup, let it simmer on the stovetop for a few minutes after heating.

Make sure not to over-toast the bread bowls-they should be just lightly crisp on the inside.

FAQ

Can I use a different type of bread for the bowl?

Yes, you can substitute sourdough with other round, crusty breads like boules or round loaves of French bread. Just ensure the loaf is sturdy enough to hold the soup without getting soggy.

How do I store leftover soup and bread bowls?

Store leftover soup in an airtight container in the refrigerator for up to 3 days. Keep the bread bowls at room temperature in a sealed bag. Reheat the soup on the stovetop or microwave and toast the bread bowls again before serving.

Can I make this soup from scratch instead of using pre-made?

Absolutely! You can prepare your own broccoli cheddar soup using fresh broccoli, chicken broth, cream and shredded cheddar. Then follow the bread bowl instructions as directed.
