Instructions

  1. Bring a large pot of salted water to a boil. Add the spinach and ricotta ravioli and cook until al dente, about 3-4 minutes. Reserve 1/2 cup pasta water, then drain.
  2. While the ravioli cooks, heat a large skillet over medium-high heat. Add the Italian chicken sausage mix and cook, breaking it up with a spoon, until browned and cooked through, about 5-6 minutes.
  3. Reduce heat to medium. Add the chopped tomato and Italian seasoning to the skillet. Cook for 1-2 minutes until the tomato softens.
  4. Stir in the sour cream, chicken stock concentrate and the juice of half the lemon. Add a splash of reserved pasta water if needed to create a smooth sauce.
  5. Add the cooked ravioli to the skillet and toss gently to coat with the sauce. Cook for 1 minute until heated through.
  6. Slice the remaining lemon half into wedges. Thinly slice the scallions. Serve the ravioli garnished with scallions and lemon wedges on the side.

Recipe Tips

For extra creaminess, add a tablespoon of butter to the sauce along with the sour cream.

If you prefer a thicker sauce, let it simmer for an extra minute before adding the ravioli.

Substitute chicken sausage with turkey sausage or plant-based sausage for a different twist.

FAQ

Can I use frozen ravioli instead of fresh?

Yes, frozen ravioli works well. Cook according to package directions, usually a minute or two longer than fresh.

How can I make this dish dairy-free?

Use dairy-free sour cream and omit the chicken stock concentrate (or use a dairy-free broth). The sauce will still be flavorful.

Can I add vegetables?

Absolutely! Sautéed spinach, zucchini or bell peppers would be great additions. Add them when you cook the tomato.
