- Preheat the broiler to high (or oven to 500°F). Wash and dry all produce. Cut one zucchini into ½-inch-thick rounds. Grate the remaining zucchini using the large holes of a box grater; place in a medium bowl. Thinly slice scallions, separating whites and greens. Pick oregano leaves from stems and chop roughly.
- Place zucchini rounds on a baking sheet. Toss with a drizzle of vegetable oil, salt, pepper and 1 teaspoon Italian seasoning. Broil until browned and softened, 5-7 minutes. Watch carefully to prevent burning. Transfer to a small bowl. Reserve the baking sheet for the flatbreads. Reduce oven temperature to 450°F.
- Heat a drizzle of olive oil in a large pan over medium heat. Add sausage, half the oregano and 2 teaspoons Italian seasoning. Cook, breaking up sausage, until browned and cooked through, 4-6 minutes. Transfer to a large bowl.
- Melt 1 tablespoon butter in the same pan over medium-high heat. Add orzo and scallion whites; stir to coat. Cook, stirring often, until toasted, 2-3 minutes. Stir in stock concentrate, half the crushed tomatoes, 1¾ cups water and 2 teaspoons Italian seasoning. Bring to a boil and cook, stirring occasionally, until liquid reduces slightly, 5-6 minutes.
- Stir in grated zucchini. Cook until tender and orzo is al dente, 3-4 minutes. Stir in half the cooked sausage and 1 tablespoon butter. Divide into containers. Top with scallion greens and Parmesan. Refrigerate for tomorrow’s lunch. Enjoy cold or reheat in the microwave.
- Place flatbreads on the reserved baking sheet. Spread with remaining crushed tomatoes; season with salt, pepper and remaining Italian seasoning. Top with mozzarella, broiled zucchini rounds and remaining sausage. Bake at 450°F until flatbreads are golden and cheese melts, 4-6 minutes. Let rest 1-2 minutes. Sprinkle with chili flakes and remaining oregano. Slice and serve.
