Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper. Arrange cornbread swirls on the sheet and bake according to package directions (about 10-12 minutes) until golden. Set aside.
  2. While cornbread bakes, dice the onion and tomatoes. Thinly slice scallions, separating white and green parts. Cut bacon into small pieces.

  6. Add diced tomatoes, chicken stock concentrates, cream sauce base and 1 cup water. Bring to a simmer. Add arborio rice and stir. Reduce heat to low, cover and cook for 15-18 minutes, stirring occasionally, until rice is tender and creamy. If needed, add a splash of water to keep it loose.
  7. While rice cooks, pat shrimp dry with paper towels. Season with a pinch of salt and pepper. In a separate skillet, heat 2 tablespoons cooking oil over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat.
  8. When rice is done, stir in cheddar cheese and butter until melted and creamy. Season with salt and pepper to taste.
