Instructions

  1. Preheat oven to 450°F (230°C) with a rack in the top position. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Halve, peel and thinly slice the onion. Thinly slice the tomato; season with salt and pepper. Trim and discard the root end of the lettuce; thinly slice the leaves.
  2. Toss potato wedges on a baking sheet with a generous drizzle of oil, half the garlic powder, a big pinch of salt and pepper. Roast on the top rack until golden brown and crispy, 20-25 minutes.
  3. While potatoes roast, heat a large drizzle of oil in a large pan over medium-high heat. Add sliced onion and cook, stirring occasionally, until browned and softened, 8-10 minutes. Stir in 1 teaspoon sugar and a splash of water. Continue cooking until the onion is caramelized and jammy, 2-3 minutes more. Season with salt and pepper. Transfer to a bowl and wipe out the pan.
  4. In a large bowl, combine ground beef, half the blue cheese (crumbled), remaining garlic powder, salt (about ¾ teaspoon) and pepper. Form into two patties, each slightly wider than a burger bun.
  5. Heat a drizzle of oil in the same pan over medium-high heat. Add patties and cook to your desired doneness, 3-5 minutes per side.
  6. Halve the brioche buns and toast them lightly. Spread mayonnaise on the cut sides of the bottom buns. Assemble burgers: place patties on buns, top with caramelized onion, remaining blue cheese, tomato slices and lettuce. Close with top buns.
  7. Divide burgers and potato wedges between plates. Serve with ketchup on the side if desired.
