Instructions

  1. Preheat oven to 450°F. Wash and dry all produce. Mince or grate the garlic. Chop the parsley. Halve the onion and peel one half; grate it on the large holes of a box grater into a large bowl (reserve the other half for another use). In a small bowl, mix 1 teaspoon balsamic vinegar (you’ll have extra) with the ketchup to make the glaze.
  2. Add the garlic, parsley, panko, ground beef and ½ teaspoon salt to the bowl with the grated onion. Season with pepper. Mix with your hands until just combined. Shape the mixture into two 1-inch-tall loaves and place them on a lightly oiled baking sheet. Brush the tops with the ketchup mixture.
  3. Roast the meatloaves for 10 minutes. Meanwhile, peel the sweet potatoes and cut them into ½-inch cubes. Place in a medium pot, add a pinch of salt and cover with water by 1 inch. Bring to a boil and cook until tender, about 10 minutes. Drain and return to the pot.
  4. After 10 minutes, remove the baking sheet from the oven. Add the green beans to the sheet, drizzle with olive oil and season with salt and pepper. Toss to coat (use tongs to avoid burns). Return to the oven and roast until the meatloaves are cooked through and the green beans are tender and lightly crisped, about 15 minutes more.
  5. While the meatloaves and green beans finish, mash the sweet potatoes with a potato masher or fork until mostly smooth. Add the butter and honey and continue mashing until melted and combined. Season generously with salt and pepper. If the mash has cooled, reheat over medium-low heat briefly.
  6. When the meatloaves and green beans are done, sprinkle the almonds over the green beans and toss to combine. Divide the meatloaves between plates and serve with the sweet potato mash and green beans on the side.
