Instructions

  1. Preheat oven to 450°F. Wash and dry all produce. Mince or grate garlic. Chop parsley. Trim stems from green beans. Halve and peel onion; grate both halves into a large bowl using the large holes of a box grater.
  2. To the bowl with onion, add garlic, parsley, panko, ground beef and 1 teaspoon salt. Season with pepper, then mix with your hands until just combined. Shape into four 1-inch-thick loaves and place on a lightly oiled baking sheet. In a small bowl, stir together balsamic vinegar and ketchup; brush mixture over the tops of the loaves. Bake until no longer pink in the center, about 25 minutes.
  3. Meanwhile, peel and chop sweet potatoes into ½-inch cubes. Place in a large pot with a pinch of salt and enough water to cover by 2 inches. Bring to a boil and cook until easily pierced with a fork, about 10 minutes. Drain and return to pot.
  4. While potatoes cook, toss green beans on a separate baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Roast in the oven until tender and lightly browned, about 15 minutes.
  5. Mash the sweet potatoes with a fork or potato masher until smooth. (If potatoes have cooled, reheat over medium-low heat.) Add butter and honey; continue mashing to combine. Season generously with salt and pepper.
  6. When green beans are done, sprinkle almonds over them and toss to combine. Divide meatloaves among plates and serve with sweet potato mash and green beans on the side.
