Instructions

  1. Preheat oven to 450°F. Wash and dry all produce. Mince or grate the garlic. Chop the parsley. Halve the onion and peel one half; grate it using the large holes of a grater into a large bowl (reserve the other half for another use). In a small bowl, mix 1 tablespoon balsamic vinegar with the ketchup to make the glaze.

Shape the mixture into two 1-inch-thick loaves and place on a lightly oiled baking sheet. Brush the tops and sides with the balsamic-ketchup glaze.
  3. Roast the meatloaves for 10 minutes. Meanwhile, peel the sweet potatoes and cut into ½-inch cubes. Place in a medium pot, cover with water by 1 inch and add a pinch of salt. Bring to a boil and cook until tender, about 10 minutes.
  4. After 10 minutes, remove the baking sheet from the oven. Add the green beans to the sheet, drizzle with olive oil and season with salt and pepper. Toss to coat (use tongs to avoid burns). Return to the oven and roast until the meatloaves are cooked through and the green beans are tender and lightly crisped, about 15 minutes more.
