Instructions

  1. Adjust an oven rack to the top position (use top and middle for 4 servings) and preheat to 425°F. Wash and dry produce.
  2. Heat a large dry pan over medium-high heat. Add the bacon and cook, turning occasionally, until crispy, 6-10 minutes. Transfer to a paper-towel-lined plate. Discard all but a thin layer of bacon fat from the pan. When cool, roughly chop the bacon.
  3. While the bacon cooks, halve, peel and thinly slice the onion.
  4. Return the pan with the bacon fat to medium-high heat (add a drizzle of oil if needed). Add the onion, season with salt and pepper and cook, stirring, until browned and softened, 3-4 minutes. Remove from heat and stir in the cream cheese until smooth.
  5. Brush or rub each flatbread with olive oil and season with salt and pepper. Place them dimpled side down on a baking sheet (for 4 servings, divide between two sheets). Toast on the top rack until golden and crisp, 3-4 minutes (for 4, use top and middle racks, swapping halfway).
  6. Flip the flatbreads so the dimpled side is up. Evenly top with the onion mixture, mozzarella, bacon and Monterey Jack. Bake on the top rack until the cheese melts, 4-6 minutes (for 4, use top and middle racks, swapping halfway). Watch carefully to avoid burning.
  7. Transfer the flatbreads to a cutting board and drizzle with fig jam to taste. Slice into quarters and serve.
