Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Cut potatoes into ½-inch thick wedges. Toss with 1 tbsp cooking oil, 1 tsp salt and half the fry seasoning. Spread in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  3. While potatoes bake, make the chipotle aioli: in a small bowl, mix mayonnaise and chipotle powder. Set aside.
  4. In a medium bowl, combine ground pork, remaining fry seasoning, 1 tsp salt and a pinch of black pepper. Mix gently and shape into 2 patties, each about ½-inch thick.
  5. Heat a large skillet over medium-high heat. Add 1 tbsp butter. Cook patties for 4-5 minutes per side, until cooked through (internal temperature 160°F). In the last minute, top each patty with shredded cheddar cheese. Cover skillet to melt cheese.
  6. Remove patties from skillet. In the same skillet, add sliced onion and cook for 2-3 minutes until softened. Stir in BBQ sauce and cook for 1 minute more.
  7. Toast potato buns in the skillet or oven until lightly golden.
  8. Assemble burgers: spread chipotle aioli on both bun halves. Place patty on bottom bun, top with BBQ onions and close with top bun.
  9. Serve burgers with crispy potato wedges on the side.
