  1. Keep focaccia refrigerated until ready to use. If it has been refrozen, thaw fully in the refrigerator before heating.
  2. Preheat your oven to 400°F. Bring a large pot of water to a boil. Place the sealed soup bag in the boiling water and cook for 20 minutes. Carefully remove the bag (it will be very hot). Cut one corner with scissors and pour the soup into a serving bowl.
  3. While the soup heats, place the focaccia directly on the oven rack. Bake until warmed through, 15-20 minutes. Remove from the oven and let cool for 3-5 minutes. Cut crosswise into slices.
  4. Microwave alternative: Cut one corner of the soup bag and pour the soup into a microwave-safe container (do not microwave in the bag). Cover loosely with microwave-safe plastic wrap or a paper towel. Microwave on high, stirring halfway through, for 5-6 minutes. Be careful-container and soup will be very hot.

For extra flavor, sprinkle additional shredded cheddar cheese on top of the soup before serving.

If you prefer a thicker soup, simmer it on the stovetop for a few minutes after heating to reduce slightly.
