Instructions

  1. Slice the demi-baguettes in half lengthwise. If desired, toast the cut sides in a skillet or oven until golden brown.
  2. Thinly slice the fresh mozzarella into rounds.
  3. In a medium bowl, combine the arugula with half of the balsamic vinegar and 1 tablespoon of olive oil. Toss to coat. Season with salt and pepper to taste.
  4. Drizzle the remaining balsamic vinegar onto the cut sides of the bottom halves of the baguettes.
  5. Layer the antipasto meats (coppa, salami, prosciutto) onto the bottom halves, followed by the sliced mozzarella. Pile on as much of the dressed arugula as you like.
  6. Place the top halves of the baguettes on the sandwiches. Serve immediately with any remaining arugula salad on the side.

Recipe Tips

For extra flavor, toast the baguette halves until lightly crisp before assembling.

If you prefer a milder bite, use baby arugula or mix with spinach.

Let the mozzarella come to room temperature for a creamier texture.

FAQ

Can I use a different type of bread?

Yes, any crusty roll or baguette works well. Ciabatta or focaccia are great alternatives.

What if I don't have antipasto mix?

You can substitute with any combination of Italian cured meats like salami, prosciutto, capicola or pepperoni.

How do I store leftovers?

Assemble the sandwiches just before serving for best texture. If you have leftovers, wrap tightly and refrigerate; the bread may soften.
