Sear pork until golden on all sides, about 2-3 minutes per side. Transfer skillet to oven and roast until internal temperature reaches 145°F, about 10-12 minutes. Let rest 5 minutes before slicing.
- In a small bowl, whisk together orange juice, lime juice, remaining minced garlic and chopped shallot. Season with salt and pepper. This is the mojo sauce.
