Instructions

  1. Wash and dry all produce. Halve, peel and finely dice the onion. Core, deseed and finely dice the green pepper. Zest and quarter the lime. Trim and discard the root end from the lettuce; separate the leaves. Gently crush the tortilla chips in their bag into small pieces.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add the diced onion, green pepper and ground pork. Season generously with salt (about ¼ teaspoon for 2 servings) and pepper. Cook, breaking up the meat into pieces, until the pork is lightly browned and the onion is slightly softened, about 4-5 minutes.
  3. Add the fajita spice blend and cook, stirring, for 30 seconds. Stir in the beef stock concentrate, ½ teaspoon sugar and 1 tablespoon water. Cook, stirring occasionally, until the pork is cooked through, about 2-3 minutes more.
  4. Meanwhile, in a small bowl, combine the sour cream, lime zest and juice from one lime wedge. Add water 1 teaspoon at a time until the mixture reaches a drizzling consistency. Season with salt and pepper to taste.
  5. Remove the pan from the heat and sprinkle the pork filling with the Mexican cheese blend. Cover the pan and let sit until the cheese melts, about 1-2 minutes.
  6. Divide the lettuce leaves between plates. Fill each leaf with the pork and cheese mixture. Drizzle with the lime crema and sprinkle with crushed tortilla chips. Serve with remaining lime wedges on the side.

Recipe Tips

For extra heat, add a pinch of cayenne pepper or a diced jalapeño with the vegetables.

If you prefer a milder flavor, use a mild fajita seasoning or reduce the amount.

Make sure to crush the tortilla chips just before serving to keep them crunchy.

FAQ

Can I use ground chicken or turkey instead of pork?

Yes, ground chicken or turkey work well as substitutes. Just adjust cooking time as needed to ensure they are fully cooked.

What can I use instead of sour cream for the lime crema?

Greek yogurt is a great substitute for sour cream. It will still provide a creamy texture and tangy flavor.

How do I store leftovers?

Store the pork filling, lettuce leaves and toppings separately in airtight containers in the refrigerator for up to 2 days. Assemble just before serving to keep the lettuce crisp.
