Instructions

  1. Adjust oven rack to top position and preheat to 425°F. Wash and dry produce. Halve, peel and thinly slice the onion; mince a few slices until you have 2 tablespoons. Cut potatoes into ½-inch-thick wedges. Halve the buns.
  2. In a small bowl, combine mayonnaise with chipotle powder to taste (start with a pinch, then add more if desired). Season with salt and pepper; set aside.
  3. Melt 1 tablespoon butter in a large pan over medium heat. Add sliced onion and season with salt. Cook, stirring occasionally, until softened and lightly browned, 10-15 minutes. Stir in half the BBQ sauce; cook until warmed through, 1-2 minutes. Transfer to a medium bowl. Wash out the pan.
  4. While onion cooks, toss potato wedges on a baking sheet with a drizzle of oil, half the fry seasoning, salt and pepper. Roast on top rack until browned and crispy, 20-25 minutes.
  5. In a large bowl, combine ground pork, minced onion, remaining fry seasoning, salt (about ½ teaspoon kosher salt) and pepper. Form into two patties, each slightly wider than a bun.
  6. Heat a drizzle of oil in the same pan over medium-high heat. Add patties and cook until browned and cooked through, 4-7 minutes per side. In the last 1-2 minutes, top each patty with cheddar; cover pan until cheese melts. Remove from pan.
  7. While patties cook, toast buns until golden. Spread bottom buns with remaining BBQ sauce. Spread top buns with chipotle aioli. Assemble burgers with patties and caramelized onion. Serve with potato wedges on the side.
