- Preheat the oven to 425°F. Bring a large pot of salted water to a boil, add the freekeh and reduce to a simmer. Cook until tender, 20-25 minutes. Drain and rinse under cold water.

- Prepare the dressing: Halve, peel and mince 2 tablespoons of shallot. Zest the lemon, then halve it. In a large bowl, whisk together the shallot, lemon zest, juice from half the lemon and 2 tablespoons olive oil. Season with salt and pepper. Taste and adjust with more olive oil if needed.
- Core and dice the apple. To the bowl with the dressing, add the cooked freekeh, shredded Brussels sprouts, Parmesan cheese and diced apple. Toss to combine. Season with salt and pepper. Plate the salad and top with the roasted Brussels sprouts and butternut squash. Serve immediately.
