- Add ½ cup reserved pasta water (¾ cup for 4 servings) and the beef stock concentrates to the skillet. Season with ½ tsp salt (1 tsp for 4) and a pinch of pepper. Bring to a simmer and cook until slightly thickened, 2-3 minutes, stirring occasionally.
- Reduce heat to low. Stir in the drained cavatappi, sour cream, smoky red pepper crema, half the Mexican cheese, butter and hot sauce to taste. Season with salt and pepper. If the sauce seems dry, add more reserved pasta water a splash at a time until the pasta is well coated.
- Sprinkle the remaining Mexican cheese over the top. Cover the skillet and let the cheese melt, 1-2 minutes. Garnish with scallion greens and serve immediately.
