Instructions

  1. Preheat the broiler to high (or oven to 500°F). Wash and dry all produce. Cut one zucchini into ½-inch-thick rounds. Grate the remaining zucchini using the large holes of a box grater; place in a medium bowl. Thinly slice scallions, separating whites and greens. Pick oregano leaves from stems and chop roughly.
  2. Place zucchini rounds on a baking sheet. Toss with a drizzle of vegetable oil, salt, pepper and 1 teaspoon Italian seasoning. Broil until browned and softened, 5-7 minutes. Watch carefully to prevent burning. Transfer to a small bowl. Reserve the baking sheet for the flatbreads. Reduce oven temperature to 450°F.
  3. Heat a drizzle of olive oil in a large pan over medium heat. Add sausage, half the oregano and 2 teaspoons Italian seasoning. Cook, breaking up sausage, until browned and cooked through, 4-6 minutes. Transfer to a large bowl.
  4. Melt 1 tablespoon butter in the same pan over medium-high heat. Add orzo and scallion whites; stir to coat. Cook, stirring often, until toasted, 2-3 minutes. Stir in stock concentrate, half the crushed tomatoes, 1¾ cups water and 2 teaspoons Italian seasoning. Bring to a boil and cook, stirring occasionally, until liquid reduces slightly, 5-6 minutes.
  5. Stir in grated zucchini. Cook until tender and orzo is al dente, 3-4 minutes. Stir in half the cooked sausage and 1 tablespoon butter. Divide into containers. Top with scallion greens and Parmesan. Refrigerate for tomorrow’s lunch. Enjoy cold or reheat in the microwave.
  6. Place flatbreads on the reserved baking sheet. Spread with remaining crushed tomatoes; season with salt, pepper and remaining Italian seasoning. Top with mozzarella, broiled zucchini rounds and remaining sausage. Bake at 450°F until flatbreads are golden and cheese melts, 4-6 minutes. Let rest 1-2 minutes. Sprinkle with chili flakes and remaining oregano. Slice and serve.
