Instructions

  1. Preheat oven to 425°F. Lightly oil a baking sheet. Trim, peel and halve carrots lengthwise, then cut into pieces about the size of green beans.
  2. In a medium bowl, combine panko, Italian seasoning, half of the Parmesan (reserve the rest), a drizzle of olive oil, salt and pepper.
  3. Pat chicken cutlets dry with paper towels; season with salt and pepper. Place them on one side of the prepared baking sheet. Brush the tops of the chicken with a thin layer of Caesar dressing (save the rest for serving). Press the panko mixture onto the coated sides to adhere (no need to coat the undersides). Bake chicken on the middle rack for 10 minutes.
  4. Meanwhile, on a second baking sheet, toss green beans and carrots with a drizzle of olive oil, salt and pepper. Roast on the top rack until tender and lightly browned, 15-20 minutes. Remove from oven.
  5. After the chicken has baked for 10 minutes, remove the sheet from the oven. Sprinkle the remaining Parmesan into a 6-inch-wide circle on the empty side of the same sheet. Return to the oven and roast on the middle rack until the chicken is browned and cooked through and the Parmesan frico is golden and crispy, 6-10 minutes. Let the chicken rest; let the frico cool until crispy, then transfer to a paper towel-lined plate.
  6. Break the frico into bite-size pieces and toss with the roasted green beans and carrots. Divide the vegetables and chicken among plates. Drizzle the remaining Caesar dressing over the chicken or serve on the side.

Recipe Tips

Keep a close eye on the frico during the final bake to avoid burning.

For extra crispiness, press the panko mixture firmly onto the chicken.

Let the frico cool completely before breaking it for the best crunch.

FAQ

Can I use chicken breasts instead of cutlets?

Yes, but you may need to pound them to an even thickness for uniform cooking.

Can I substitute the vegetables?

Absolutely! Broccoli, asparagus or bell peppers would work well.

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
