- In a separate large bowl, whisk together balsamic vinegar, Dijon mustard, 1 tablespoon olive oil, ½ teaspoon sugar, salt and pepper (for 4 servings: 2 tablespoons olive oil and 1 teaspoon sugar).
- Slice chicken crosswise. To the bowl with dressing, add kale, cashews, grapes, roasted sweet potato and feta. Toss until evenly coated. Divide salad between bowls and top with sliced chicken. Serve immediately.
