Instructions

  1. Preheat oven to 425°F with racks in top and middle positions. Bring a medium pot of salted water to a boil. Wash and dry produce. Cut broccoli into bite-size pieces. Toss broccoli on a baking sheet with a drizzle of oil, salt and pepper. Roast on top rack until browned and tender, 15-20 minutes.
  2. Arrange bacon in a single layer on a separate baking sheet. Roast on middle rack until crispy, 15-20 minutes. Once cool, roughly chop.
  3. Melt 1 tablespoon butter in a large pan over medium-high heat. Add panko, everything bagel seasoning, salt and pepper; cook, stirring, until golden, 2-3 minutes. Transfer to a small bowl. Wipe out pan.
  4. Add cavatappi to boiling water and cook until al dente, 9-11 minutes. Drain and return to pot.
  5. In the same pan, whisk together cream sauce base and 1 cup water over medium heat. Bring to a simmer. Add cream cheese, mushroom stock concentrate and garlic powder. Cook, whisking, until cream cheese is fully incorporated and sauce is smooth, 2-3 minutes. Remove from heat and whisk in three-quarters of the cheddar and 1 tablespoon butter until melted. Season with salt and pepper if desired.
  6. Pour cheese sauce over drained pasta and stir to combine. Coat an 8×8-inch baking dish with cooking spray. Transfer mac and cheese to dish. Top with remaining cheddar. Bake on middle rack until browned, 12-15 minutes. Let rest 5 minutes.
  7. While mac and cheese bakes, halve jalapeño lengthwise, remove ribs and seeds and thinly slice crosswise. Dice tomato into ½-inch pieces.
  8. In a small microwave-safe bowl, combine jalapeño, 1 teaspoon vinegar, ¼ teaspoon sugar and a pinch of salt. Cover with plastic wrap and microwave 30 seconds. Set aside to pickle, stirring occasionally.
  9. Serve broccoli, baked mac and cheese, toasted panko, tomato, pickled jalapeño and chopped bacon family-style. Let everyone build their own plate.

Recipe Tips

For a milder pickled jalapeño, remove all seeds and ribs.

If you don’t have everything bagel seasoning, substitute with sesame seeds, poppy seeds, dried garlic and dried onion flakes.

The mac and cheese can be assembled ahead and baked just before serving.
