Instructions

  4. Meanwhile, heat 1 tablespoon olive oil in a large nonstick pan over medium-high heat. Add the diced bell pepper and cook until slightly softened, about 3 minutes. Stir in the scallion whites, the remaining 1 teaspoon Cajun spice and a large pinch of salt. Cook until fragrant, about 30 seconds.
  5. Add the microwaveable jasmine rice and 1 tablespoon butter to the pan with the vegetables. Break up the rice with a spoon and cook, stirring occasionally, until warmed through and starting to crisp, about 2-3 minutes.
  6. Divide the rice mixture between plates, then top with the Cajun pulled pork. Drizzle with the remaining honey mixture if desired. Garnish with the scallion greens and serve.
