Lunch5 min1163 cal / serving

If you love pizza but want something a little different, this baked stromboli is the answer. It’s like a pizza that rolled itself up, trapping all the savory fillings inside a crisp, golden crust. Think crispy bacon, earthy mushrooms, tender spinach and a blend of mozzarella and Parmesan cheese, all wrapped in a soft pizza dough and baked to perfection.

Serve it sliced with a side of warm marinara sauce for dipping. It’s a fun, hands-on dinner that feels special but comes together easily. Perfect for weeknights or game day gatherings.

Instructions

  1. Preheat your oven to 425°F (220°C) and adjust a rack to the middle position. Let the pizza dough sit at room temperature in its package until ready to use. Wash and dry all produce. Thinly slice the mushrooms (skip if pre-sliced). Peel and mince or grate the garlic.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until browned and slightly crispy, about 5-7 minutes. Season with salt and pepper. Add another drizzle of oil, then stir in the spinach (add in batches if needed). Cook until the spinach is slightly wilted, 1-2 minutes. Add the garlic and half the Italian seasoning (use all for 4 servings). Cook until the spinach is fully wilted and the garlic is fragrant, another 1-2 minutes. Season with salt and pepper. Transfer the mixture to a medium bowl and let cool slightly.
  3. While the veggies cool, place the butter in a small microwave-safe bowl and microwave for 30 seconds or until melted. Remove the pizza dough from its package and cut it in half. Place both pieces on a lightly oiled baking sheet. Using your hands, gently stretch each piece into a 6×8-inch rectangle. (If making 4 servings, assemble the first two strombolis before starting the second two so they all fit on one sheet.) If the dough keeps shrinking, let it rest for a few minutes before stretching again.
  4. Spread the mozzarella evenly over each dough rectangle, leaving a ½-inch border around the edges. Top with the cooled vegetable mixture (drain any excess liquid first) and sprinkle with Parmesan. Gently roll up each rectangle starting from one short side to form a log. Place the strombolis seam-side down on the baking sheet; pinch the ends closed and tuck them under. Brush the tops with the melted butter and sprinkle lightly with salt and pepper. Bake on the middle rack until deep golden brown and crisp, 14-16 minutes.
  5. While the strombolis bake, place the marinara sauce in the same small bowl used for the butter. Cover tightly with plastic wrap and microwave until warmed through, 30-45 seconds.
  6. Transfer the baked strombolis to a cutting board and slice each crosswise into quarters. Divide among plates and serve with the warm marinara sauce on the side for dipping.

Recipe Tips

If the dough keeps retracting while you stretch it, let it rest for a few minutes to relax the gluten.

For extra crispiness, brush the stromboli with melted butter before baking.

Let the cooked vegetables cool slightly before adding to the dough to prevent the dough from becoming soggy.

FAQ

Can I use pre-shredded mozzarella?

Yes, pre-shredded mozzarella works fine. However, freshly grated mozzarella melts more smoothly.

How do I store leftover stromboli?

Wrap leftover slices in foil and refrigerate for up to 3 days. Reheat in a 350°F oven for about 10 minutes to restore crispness.

Can I add other fillings?

Absolutely! Cooked sausage, bell peppers or onions would be great additions. Just be sure to cook them first and drain any excess moisture.
