Drizzle with oil and season all over with the reserved Mexican Spice Blend, salt and pepper. Place steak on top of the beans. Roast on the top rack until steak is browned and cooked through, 15-20 minutes.
- In a small bowl, combine sour cream, guacamole, juice from half the lime, salt and pepper to make the avocado crema.
- Once steak and beans are done, transfer steak to a cutting board to rest. Transfer sweet potato to the tray with beans and toss to combine. Sprinkle Monterey Jack cheese over the sweet potato and black bean mixture. Return to the oven and bake until cheese melts, 1-2 minutes.
- Slice steak crosswise. Divide the sweet potato and black bean jumble between plates. Arrange sliced steak on top. Dollop with avocado crema and serve with remaining lime wedges.
