Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, pat chicken cutlets dry with paper towels. Season both sides with Italian seasoning, chili flakes, salt and pepper.
  3. Heat 2 teaspoons cooking oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 3-4 minutes per side. Transfer to a plate and tent with foil.
  4. Reduce heat to medium. Add 2 teaspoons olive oil to the same skillet. Add sliced zucchini and cook until tender and lightly browned, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add the chicken stock concentrate, juice of half the lemon and 1/4 cup reserved pasta water to the skillet. Stir to combine, scraping up any browned bits. Reduce heat to low.
  6. Stir in sour cream, grated Parmesan and butter until melted and smooth. Add the drained spaghetti and toss to coat. If too thick, add more pasta water a tablespoon at a time.
  7. Slice the chicken. Serve pasta topped with chicken, a squeeze of remaining lemon and a sprinkle of chili flakes if desired.

Recipe Tips

Reserve extra pasta water to adjust sauce consistency.

For a milder dish, reduce or omit chili flakes.

Use freshly grated Parmesan for best melting and flavor.
