Snack5 min875 cal / serving

These one-pan pork fajita lettuce wraps are the ultimate quick and healthy dinner. Instead of tortillas, you’ll use crisp lettuce leaves to hold a savory filling of ground pork, sautéed onions and bell peppers, all seasoned with a bold fajita spice blend. A sprinkle of melted cheese and a drizzle of tangy lime crema take it over the top, while crushed blue corn tortilla chips add a satisfying crunch in every bite.

Ready in just 20 minutes, this recipe is perfect for busy weeknights when you want something flavorful without a lot of cleanup. The one-pan method means minimal dishes and the lettuce wraps keep things light and low-carb. Plus, the lime crema is incredibly easy to whip up – just stir together sour cream, lime zest and juice for a cooling finish.

Instructions

  1. Wash and dry all produce. Halve, peel and finely dice the onion. Core, deseed and finely dice the green pepper. Zest the lime, then quarter it. Trim the root end from the lettuce and separate the leaves. Gently crush the tortilla chips in their bag into small pieces.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add the diced onion, green pepper and ground pork. Season generously with salt (about ¼ tsp) and pepper. Cook, breaking up the meat, until the pork is lightly browned and the onion is slightly softened, 4-5 minutes. Add the fajita spice blend and cook, stirring, for 30 seconds. Stir in the beef stock concentrate, ½ tsp sugar and 1 tbsp water. Cook, stirring occasionally, until the pork is cooked through, 2-3 minutes more.
  3. Meanwhile, in a small bowl, combine the sour cream, lime zest and juice from one lime wedge. Add water 1 tsp at a time until the mixture reaches a drizzling consistency. Season with salt and pepper.
  4. Remove the pan from heat and sprinkle the Mexican cheese blend over the pork filling. Cover the pan until the cheese melts, 1-2 minutes. Divide the lettuce leaves among plates and fill with the pork mixture. Drizzle with the lime crema and sprinkle with crushed tortilla chips. Serve with remaining lime wedges on the side.

Recipe Tips

For extra heat, add a pinch of cayenne or a diced jalapeño with the vegetables.

If you prefer a milder flavor, use a mild fajita seasoning or reduce the spice blend.

To make the lettuce wraps sturdier, choose large, intact leaves and pat them dry before filling.

Can I make this dairy-free?

Use a dairy-free sour cream alternative and omit the cheese or use a vegan cheese shreds.
