Instructions

  1. Season chicken breasts with salt, pepper and half of the lemon zest. Set aside.
  2. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes per side. Remove from skillet and let rest. Slice before serving.
  3. In the same skillet, add remaining olive oil and butter. Sauté onion until translucent, about 3 minutes. Add garlic and cook for 1 minute.
  4. Add Arborio rice and stir for 1-2 minutes until slightly toasted.
  5. Begin adding warm broth one ladleful at a time, stirring constantly. Wait until each addition is mostly absorbed before adding the next. Continue for about 18-20 minutes until rice is creamy and al dente.
  6. Meanwhile, in a separate pan, sauté asparagus in a little olive oil until tender-crisp, about 3-4 minutes. Season with salt and pepper.
  7. When risotto is done, stir in Parmesan cheese, lemon juice, remaining lemon zest and sautéed asparagus. Adjust seasoning.
