Instructions

  1. Wash and dry produce. Place the garlic herb butter packet in a glass of warm water to soften. Drain the pepper and onion mix. Halve the baguettes lengthwise.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add the Italian chicken sausage mix and pepper and onion mix. Cook, breaking up the sausage, until browned and cooked through, 4-6 minutes. Stir in the marinara sauce. Turn off the heat. Sprinkle mozzarella cheese over the sausage mixture and let it melt, about 1 minute.
  3. Spread the garlic herb butter onto the cut sides of the baguettes. If desired, toast the baguettes in a toaster or under the broiler until golden. In a bowl, combine the mixed greens, halved grape tomatoes, Parmesan cheese, sliced almonds and Italian dressing. Toss to coat.
  4. Fill the baguettes with the cheesy sausage mixture. Serve the sandwiches alongside the salad. Ensure the chicken sausage reaches an internal temperature of 165°F before serving.

Recipe Tips

For extra crunch, toast the baguettes after spreading with garlic herb butter.

If you prefer a milder flavor, use sweet Italian chicken sausage instead of spicy.
