Instructions

  1. Zest and juice the lime. Thinly slice the scallions, separating white and green parts. Drain the pineapple and chop into small pieces if needed.
  2. In a small bowl, mix the mayonnaise with half the lime juice and a pinch of salt to make the slaw dressing. Set aside.
  3. Heat a large skillet over medium-high heat with cooking oil. Add the ground pork and cook, breaking it apart, until browned, about 3-4 minutes. Season with salt and pepper.
  4. Add the white parts of the scallions, chipotle powder and BBQ seasoning to the pork. Cook for 1 minute until fragrant.
