Instructions

  1. Slice the brioche buns in half. Place half of the garlic-herb butter in a small microwave-safe bowl and microwave until melted, about 30 seconds. Stir in half of the hot honey until combined.
  2. Tear or roughly chop the pulled pork into smaller pieces. Pat the chicken cutlets dry with paper towels and season all over with salt and pepper. Form the ground beef into four equal-sized patties, each slightly wider than a bun and season generously with salt and pepper.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add the pulled pork, BBQ sauce and ¾ cup water. Cook, stirring occasionally, until the liquid has reduced and thickened, about 4-6 minutes. Taste and adjust seasoning with salt and pepper. Keep covered until ready to serve.
  4. GRILL METHOD: Heat a well-oiled grill or grill pan to medium-high heat. Add the beef patties and chicken cutlets. Cook the patties to your desired doneness and the chicken until cooked through (about 3-5 minutes per side for both, but grills vary). During the last 2 minutes of cooking, brush the chicken with the honey-garlic butter and top each with a slice of gouda. Top each beef patty with shredded cheddar. Cover the grill and cook until the cheese melts. Add the buns cut-side down to toast until golden.
  5. STOVETOP METHOD: Toast the buns in a dry pan or oven. Heat a drizzle of oil in a second large pan over medium-high heat. Add the beef patties and chicken cutlets. Cook patties to desired doneness (3-5 minutes per side) and chicken until cooked through (3-5 minutes per side). In the last 2 minutes, brush chicken with honey-garlic butter and top with gouda; top patties with cheddar. Cover and cook until cheese melts.
  6. Spread the cut sides of two buns with the remaining garlic-herb butter and fill with the chicken. Drizzle with remaining hot honey to taste. Fill two buns with the beef patties. Fill the remaining two buns with the BBQ pulled pork.

For best results, use a meat thermometer: cook chicken to 165°F and beef patties to 160°F.

If you don’t have Mike’s Hot Honey, substitute regular honey mixed with a pinch of cayenne pepper.
