Instructions

  1. Wash and dry the produce. In a small pot, combine the jasmine rice, 3/4 cup water and a generous pinch of salt. Bring to a boil, then cover and reduce the heat to low. Simmer until the rice is tender, 15 to 18 minutes. Keep covered off the heat until serving.

  3. In a small bowl, stir together the sweet Thai chili sauce, ponzu sauce, 2 1/2 tablespoons sweet soy glaze, 2 1/2 teaspoons rice wine vinegar and 1/2 teaspoon sugar.
  4. Heat the cooking oil in a large pan over medium-high heat. Add the scallion whites and cook, stirring, until just softened, about 1 minute.
  5. Add the ground pork and garlic powder to the pan. Season with salt and pepper. Press the pork into an even layer and let it brown undisturbed on the bottom, 3 to 4 minutes.
  6. Break the pork into pieces with a spatula and continue cooking until cooked through, 1 to 2 minutes more. Ground pork should reach an internal temperature of 160°F.
  7. Pour the sauce into the pan and cook, stirring, until it lightly thickens and coats the pork, about 1 minute.
  8. Stir in the red cabbage and carrot mix. Cook until just tender, 2 to 3 minutes. Taste and season with more salt and pepper if needed.
