Instructions

  1. Cook the microwavable lemongrass brown rice according to package directions. Fluff with a fork and stir in butter, a squeeze of lime juice and chopped cilantro. Keep warm.
  2. While rice cooks, thinly slice the green bell pepper into strips. Chop the cilantro (stems and leaves). Cut the lime into wedges.
  3. In a small bowl, whisk together sweet soy glaze, sweet Thai chili sauce, cornstarch and sugar until smooth.
  4. Heat cooking oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it apart, until browned and cooked through, about 4-5 minutes. Season with salt and pepper.
  5. Add bell pepper strips to the skillet and cook for 2 minutes, until slightly softened.
  6. Pour the sauce mixture over the pork and peppers. Stir and cook for 1-2 minutes until the sauce thickens and coats everything evenly.
  7. To serve, divide the rice among bowls. Top with the sweet soy pork and pepper mixture. Garnish with remaining cilantro and a lime wedge.
