Instructions

  1. Preheat the oven to 400°F (200°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut-side up in a baking dish and set aside.
  2. Bring a small pot of salted water to a boil. Add the Israeli couscous and cook until tender, about 8-10 minutes. Drain and set aside.
  3. While the couscous cooks, heat 1 teaspoon of cooking oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 4-5 minutes. Add the ground pork and cook, breaking it up with a spoon, until browned, about 5-6 minutes.
  4. Stir in the chopped tomato, tomato paste, chicken stock concentrate and Tuscan heat spice. Cook for 2-3 minutes until the tomato softens. Remove from heat and stir in the cooked couscous and butter until well combined.
  5. Stuff each bell pepper with the pork-couscous mixture, packing it firmly. Top each pepper with mozzarella cheese.
  6. Bake the stuffed peppers for 15-20 minutes, until the peppers are tender and the cheese is melted and bubbly. Serve hot.
