Instructions

  1. Sprinkle 3 tablespoons flour on a clean work surface. Remove pizza dough from packaging and place on floured surface. Shape each piece into a ball. Sprinkle dough balls with 2 tablespoons flour. Cover with a clean kitchen towel and let rest at room temperature for 20 minutes. Meanwhile, adjust oven rack to top position (top and middle for 4 servings) and preheat to 475°F.
  2. Wash and dry produce. Thinly slice mushrooms. Trim and discard woody ends from asparagus; cut into ½-inch diagonal pieces. Pat steak dry with paper towels; season with half the garlic powder, half the thyme, salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add steak, reduce heat to medium and cook until browned, 2-3 minutes per side. Transfer to a cutting board to rest.
  3. After dough has rested 20 minutes, line a baking sheet with parchment paper. Press and stretch each dough ball into a rough oval on the prepared sheet. Cover with a clean towel and let rest 15 minutes.
  4. Meanwhile, heat the same pan over medium-high heat. Add mushrooms, remaining garlic powder, remaining thyme, salt and pepper. Stir in ¼ cup water. Cook, stirring, until water evaporates and mushrooms are browned, 3-5 minutes.
  5. After dough has rested 15 minutes, use floured hands to press and stretch into larger ovals, about 10 inches long and 5-6 inches wide. Sprinkle mozzarella over dough, leaving a 1-inch border. Top with mushroom mixture and asparagus. Drizzle or brush edges with olive oil.
  6. Bake pizzas on top rack for 10 minutes. Meanwhile, thinly slice steak against the grain. After 10 minutes, remove pizzas from oven and top with sliced steak and blue cheese. Return to oven and bake until crust is golden and crisp, 5-10 minutes more.
  7. Slice pizzas and serve.
