- Transfer the pan to the oven and bake until the burgers are no longer pink in the center, 5 to 7 minutes. If your pan is not ovenproof, move the patties to the baking sheet with the sweet potatoes to finish cooking.
- Split the potato buns and place them on the baking sheet with the sweet potatoes. Toast in the oven for 2 to 3 minutes.
- In a large bowl, whisk a pinch of the remaining ginger, a pinch of the remaining garlic and a drizzle of vegetable oil. Season with salt and pepper, adding more garlic or ginger if desired. Add the mixed greens and toss to coat.
- Spread sriracha mayo on the toasted buns. Add the turkey burgers and sprinkle with the remaining cilantro. Serve with the ginger-dressed greens, sweet potato chips and any extra sriracha mayo for dipping.
