- Once the water is boiling, add the penne and cook until al dente, 9-11 minutes. Drain, reserving ½ cup of pasta cooking water.
- Add the diced Roma tomato, canned diced tomatoes and 1 teaspoon sugar to the pan. Bring to a simmer and cook until the sauce thickens, about 10 minutes. Season with salt and pepper.
- Add the cooked penne and spinach to the sauce. Toss until the spinach is wilted. Stir in enough reserved pasta water to loosen the sauce to a loose, coating consistency. Season with salt and pepper.
- Divide the pasta among plates. Sprinkle with Parmesan cheese and serve immediately.
