- In a small saucepan, combine quinoa, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until tender. Remove from heat and let stand covered for 5 minutes.

- Fluff the cooked quinoa with a fork and stir in the remaining lime zest and a squeeze of lime juice. Season with salt to taste.
