Instructions

  1. In a small bowl, combine the mayonnaise and sriracha to make the sriracha mayo. Set aside.
  2. Thinly slice the scallions, separating the white and green parts. Cut the mini cucumber into small dice. Roughly chop the peanuts.
  3. In a medium bowl, toss the shredded red cabbage with the sesame dressing, diced cucumber and the green parts of the scallions. Set aside.
  4. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 4-5 minutes. Season with salt and pepper.
  5. Stir in the hoisin sauce, beef stock concentrate and the white parts of the scallions. Cook for 1-2 minutes until the sauce thickens and coats the beef. Remove from heat.
  6. Warm the flour tortillas: either wrap them in a damp paper towel and microwave for 30 seconds or heat them in a dry skillet for about 30 seconds per side.
  7. Assemble the tacos: spoon the hoisin beef onto the warm tortillas. Top with the sesame cabbage slaw, a drizzle of sriracha mayo and sprinkle with chopped peanuts. Serve immediately.

For extra heat, add more sriracha to the mayo or to the beef.
