Instructions

  1. Cook the jasmine rice according to package directions; keep warm.
  2. While rice cooks, prepare the cucumbers. Place the mini cucumbers on a cutting board and smash them gently with the side of a knife or a rolling pin until they crack open. Cut into bite-sized pieces. Toss with 1/2 teaspoon salt, 1 teaspoon sugar and 1 teaspoon sesame oil. Set aside.
  3. In a small bowl, mix the umami ginger sauce, ponzu sauce, sweet Thai chili sauce and gochujang sauce. Set aside.
  4. Pat the chicken breast dry and season with black pepper. Heat 1 teaspoon cooking oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
  5. Reduce heat to medium. Add the minced garlic and Korean chili flakes to the skillet; cook for 30 seconds until fragrant.
  6. Pour the prepared sauce mixture over the chicken. Stir and cook for 1-2 minutes until the sauce thickens and coats the chicken.
  7. To serve, divide the rice between bowls. Top with the ginger chicken, smashed cucumbers and peanuts. Drizzle any remaining sauce from the skillet over the top.

Recipe Tips

For extra crunch, toast the peanuts in a dry skillet over medium heat for 2-3 minutes before adding.

Adjust the heat by using more or less Korean chili flakes.

If you can’t find mini cucumbers, use half a regular cucumber and remove the seeds before smashing.
