Instructions

  1. Wash and dry all produce. Dice the tomato into ½-inch pieces. Trim the cucumber, quarter lengthwise, then slice crosswise into ½-inch-thick pieces. Trim and thinly slice the scallions, separating the white parts from the green; mince the white parts. Trim the root end from the lettuce and chop into 1-inch pieces.
  2. In a medium bowl, combine the ground turkey, minced scallion whites, Turkish spice blend (use all for 4 servings), ¼ of the feta, a generous pinch of salt (about ½ tsp for 2 servings, 1 tsp for 4) and a few grinds of pepper. Mix gently. Form the mixture into 6 meatballs (12 for 4 servings). Tip: wet your hands with cold water to prevent sticking.
  3. Heat a drizzle of cooking oil in a large nonstick pan over medium-high heat. Add the meatballs and gently press them down with a spatula to form ½-inch-thick patties. Cook until browned and cooked through, about 2-3 minutes per side. Work in batches if needed.
  4. In a small bowl, toss the diced tomato and cucumber with a pinch of salt and pepper. In another small bowl, whisk together the Greek vinaigrette and sour cream. Slowly drizzle in the olive oil while whisking continuously until emulsified. Season with salt and pepper to taste.
  5. In a large bowl, toss the chopped lettuce and scallion greens with enough dressing to coat. Taste and adjust seasoning.
  6. Divide the dressed salad among serving bowls. Arrange the turkey patties, tomato-cucumber mixture, red pepper jam (as hummus) and remaining feta on top in separate sections. Drizzle any remaining dressing over the patties and serve.
