Instructions

  1. Prepare the pickled onion: Halve, peel and thinly slice half the red onion; dice the remaining half into ¼-inch pieces. Zest the lime, then quarter it. Roughly chop the cilantro. In a small microwave-safe bowl, combine the sliced onion, ¼ teaspoon sugar, juice from three lime wedges and a pinch of salt and pepper. Add the chicken in a single layer and season with the remaining cumin, salt and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes. Transfer to a plate and wipe out the pan.
  4. Prepare the lime crema: In a small bowl, combine the sour cream, lime zest and juice from the remaining lime wedge. Add water 1 teaspoon at a time until the mixture reaches a drizzling consistency. Season with salt and pepper to taste.
  5. Toast the tortillas: Heat the same pan over medium heat. Working in batches, add the tortillas and cook until lightly browned, 1-2 minutes per side. Use tongs for easy flipping.
  6. Assemble the baleadas: Divide the tortillas among plates. Spread each with refried beans, then top with the spiced chicken. Sprinkle with cotija cheese, add pickled onions (drained), drizzle with lime crema and garnish with chopped cilantro. Serve immediately.
