- Wash and dry produce. Quarter the lemon. Chop the lettuce into bite-size pieces. Thinly slice the tomato into rounds and season with salt and pepper.
- Pat the chicken dry with paper towels and season all over with half the Italian seasoning, salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add the chicken in a single layer and cook, stirring occasionally, until browned and cooked through, 4-6 minutes. (Chicken is fully cooked when internal temperature reaches 165°F.)
- Meanwhile, in a small bowl, whisk together the Caesar dressing, mayonnaise, 1 tbsp olive oil, ½ tsp Italian seasoning, a squeeze of lemon juice and a pinch of salt and pepper. In a large bowl, combine the lettuce with half of the creamy Caesar dressing and toss to coat. Taste and adjust seasoning with salt and pepper if needed.
- Wrap the tortillas in damp paper towels and microwave until warm and pliable, about 30 seconds.
- Place the tortillas on a clean work surface. Spread the remaining creamy Caesar dressing across the bottom third of each tortilla. Top with the chicken, tomato slices, half the Parmesan and as much dressed salad as you like (reserve some salad for serving). Fold up the bottom side of each tortilla over the filling, then fold over the left and right sides toward the center. Roll up the tortillas starting from the filled side to form wraps.
- Halve the wraps diagonally. Divide the wraps and remaining salad between plates. Garnish the salad with the remaining Parmesan and serve.
