Instructions

  1. Wash and dry all produce. Halve, peel and thinly slice the onion. Peel and mince or grate the garlic. Dice the tomato into ½-inch pieces. Drain and rinse the kidney beans. Remove and discard any large stems from the kale. Quarter the lemon.
  2. Pat the tilapia dry with paper towels; season generously all over with salt and pepper. Set aside.
  3. Heat a large drizzle of oil in a large pan over medium-high heat. Add the onion and cook, stirring occasionally, until softened, 3-5 minutes.   5. Place the tilapia over the beans and kale. Reduce the heat to medium-low. Cover the pan again and simmer until the fish is cooked through and flakes easily with a fork, 8-10 minutes.
  6. Squeeze the juice from one lemon wedge (two wedges for 4 servings) over the tilapia. Divide the tilapia, beans and kale among plates. Serve with the remaining lemon wedges on the side.
