Instructions

  3. Heat a drizzle of vegetable oil in a large nonstick pan over medium-high heat. Season pork chops on all sides with fall spice blend, salt and pepper. Sear pork until browned, 3-4 minutes per side, until just shy of desired doneness.
  4. Pour the maple-mustard mixture into the pan with the pork. Let it simmer until thickened to a glaze, about 1 minute, turning pork to coat evenly. Remove pan from heat.
  5. In a large bowl, toss mixed greens with dried cranberries, sunflower seeds and 1 tablespoon olive oil. Season with salt and pepper.
  6. Discard thyme sprigs from the baking sheet. Divide roasted potatoes, pork chops and salad among plates. Drizzle any remaining glaze from the pan over the pork. Serve with lemon wedges on the side for squeezing.
