Instructions

  1. Preheat your oven to 425°F. Cut the potatoes into 1/2-inch rounds. Toss with 1 tsp cooking oil, fry seasoning and a pinch of salt. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy.
  2. While potatoes bake, thinly slice the onion. Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove bacon and drain on paper towels. Pour off all but 1 tsp bacon fat from the skillet.
  3. In the same skillet, add the sliced onion and cook over medium heat, stirring occasionally, until softened and caramelized, about 8-10 minutes. Stir in BBQ sauce and cook for 1 more minute. Remove from heat.
  4. Form ground beef into 2 patties, each about 1/2-inch thick. Season both sides with salt. Heat 1 tsp cooking oil in a separate skillet over medium-high heat. Cook patties for 4-5 minutes per side for medium doneness. During the last minute, top each patty with a slice of Gouda cheese and cover to melt.
  5. Slice the brioche buns in half and toast them in the skillet or oven until lightly golden. Spread butter on the cut sides if desired.
  6. Assemble the burgers: Place a patty with melted Gouda on each bun bottom. Top with a spoonful of BBQ caramelized onions, a few slices of dill pickle and crispy bacon. Close with bun tops.
  7. When potato rounds are done, sprinkle pepper jack cheese over them and return to the oven for 1-2 minutes until cheese melts. Dollop with sour cream and sprinkle with sliced scallions. Serve alongside the burgers.
